Chocolate Chip + Peanut Butter Cookies

Yes I know this recipe has circled Blogger several times -
(thanks so much Emily Rose! They are incredible!)
- but they are so very amazing I *have* to add to the hundreds of cookie posts out there. ;)

I just made a batch this evening and had to snap a picture. They always come out SO perfectly round and delicious, like something from a bakery. I don't think I've ever worked with a cookie recipe that is *this* flawless. :)

My whole family loves them (we use unbleached white flour rather then the gluten free mix the recipe calls for,) and someone makes a batch nearly ever week...

~*~ the recipe ~*~

Ingredients:

- 1 cup brown sugar

- 1/4 cup peanut butter

- 1/2 cup butter, softened

- 1 large egg

- 1 t. vanilla extract

- 1 3/4 cups unbleached white flour

- 1 t. baking powder

- 1 1/2 t. baking soda

- 1/4 t. salt

- 1 cup semi-sweet chocolate chips

Directions:

Preheat oven to 325 *F. Combine the brown sugar, peanut butter and butter in the bowl of your mixer. Beat until fluffy - about 3-4 minutes. Beat in egg and vanilla until fluffy - about two minutes.

Dump in the dry ingredients (all but the chocolate chips) and mix until combined and smooth. Add chocolate chips. Mix until well distributed.

Form into balls (1" scoop) and place on parchment paper about 2 inches apart.

Bake at 325 *F for 9 minutes or until the top becomes slightly golden brown.
